After a hard week of work (and hopefully training) it can be tempting to reward yourself with a drink and a takeaway. Why not try our recipe for kebab and chips below as a healthier choice. Sorry we haven’t figured out the healthy drink option just yet!
Lamb Kofta with Sweet Potato Chips
For the Kofta;
1 small onion
1 small bunch of parsley
1 small bunch of mint, leaves only
400g lamb mince
50g toasted pine nuts, roughly chopped
2 tbs Baharat Spice
1½ tsp black pepper
½ tsp salt
Grate the onion, and squeeze out most of the liquid – a sieve works best (use your hands if you don’t mind smelly fingers for days!) Finely chop the parsley and mint, and combine with grated onion in a large bowl.
Next, mix in the meat, pine nuts, baharat, salt and pepper until thoroughly combined. Using wet hands shape into fingers, meatballs or around skewers, cover and chill for at least an hour. Spray a griddle pan or oven tray with the oil spray. Cook the kebabs until golden brown on all sides, and cooked through to your liking. Eat immediately with a hearty serving of salad and sweet potato chips.
